Beef and Broccoli Stir Fry

Quick and Easy Homemade Beef and Broccoli Stir Fry Recipe: A Must-Try One-Pan Dish for Busy Weeknights!

This was an absolute hit the first time I made it. The steak was so tender! I think the key to that is letting the meat marinate in the sauce for 20 minutes or longer.

If you're serving over rice and you cook it from scratch and not a minute rice, you can go ahead and start it once you have your meat in the marinade/sauce and are about to start the broccoli.

  1. Slice the flank steak against the grain in 1/4" pieces and set aside.

  2. In a medium mixing bowl add cornstarch and water and stir until the cornstarch is completely dissolved.

  3. Add low sodium soy sauce, brown sugar, grated fresh ginger, minced garlic, and red pepper flakes (optional), then stir and add flank steak to this mixture to marinate. Minimum of 20 minutes.

  4. Rinse the broccoli florets and set aside. If you are using a whole head of broccoli, cut the broccoli head into bite-size pieces rinse and set aside.

  5. Preheat a large skillet (with lid) over medium heat and add olive oil. Add the broccoli florets and stir.

  6. Add about 2 tablespoons water, cover with the lid, and let it cook for a few minutes to soften up.

  7. Remove the lid and finish cooking until all the water is absorbed. Transfer the broccoli to a plate and set aside.

  8. Add another tablespoon of olive oil to the pan and increase the heat to high. Add the beef to arrange it in a single layer using tongs as to keep as much of the marinade in the bowl for later. Cook it for a few minutes, stirring occasionally, until cooked through.

  9. When the beef is cooked, reduce the heat to medium/low and add the marinade/sauce mixture. Mix it with the meat and let cook for a couple of minutes, until it starts to bubble and get thicker.

  10. Add broccoli and stir again to combine. Sprinkle some sesame seed on top and serve with a bowl of rice.

Notes

  • Make sure you use LOW SODIUM soy sauce!

  • To make slicing the meat easier, use a sharp knife and slice thinly against the grain.

  • When cooking the meat, make sure the pan is hot. That will help you to cook quickly, keeping it tender inside.

  • If the meat releases too much juice, simply scoop the liquid out and discard, otherwise the beef will boil instead of searing.

  • If the sauce is too thick, add an additional 1-2 tablespoons water in the end to thin it out.

  • If the sauce is too thin, you can mix another tablespoon of cornstarch with 2 tablespoons water and add to the skillet, then cook for 1-2 more minutes.
